Green Bean and Apricot Salad

Ingredients450g French beans, trimmed
6 soft dried apricots, cut into thin strips
1 tbsp chopped tarragon
1 tbsp chopped flat-leaf parsley
25g flaked almonds, toasted
Dressing:
2tbsp white wine vinegar
6tbsp olive oil
1/2tsp Dijon mustard
Pinch of sugar
Salt and pepper

Preparation1. Steam the French beans on 100% steam for 4 minutes.
2. Refresh with ice water.
3. Whisk together the dressing and check for seasoning.
4. Lightly toast the almonds in a clean dry pan on the induction hob until lightly toasted.
5. Toss green beans with dressing and herbs.
6. Scatter over apricots and toasted flaked almonds.
