Tepan Thai Beef Salad

Ingredients400g thick sirloin steak
2 cucumbers, seeded and thinly sliced
250g punnet cherry tomatoes, halved
6 spring onions, finely chopped
2 tbsp finely chopped mint
2 tbsp finely chopped coriander
2 tbsp finely chopped basil
Dressing
100ml fresh lime juice
100ml fish sauce
30ml soya sauce
3 cloves garlic, crushed
1 red chilli, finely chopped
1 tbsp brown sugar

Let's Do Lunch

Preparation1. Mix all the dressing ingredients together, pour half over the steak and marinade, remember to turn over.
2. Arrange all the salad ingredients artistically on a platter.
3. Take the steak out of the fridge half an hour before cooking.
4. Lightly oil the tepanyaki with sunflower oil and heat up on 12.
5. Remove the steaks from the marinade. Lightly oil and season with salt and pepper.
6. Sear the steak on both sides until browned but still rare. Allow to rest for 5 minutes then slice very thinly.
7. Arrange steak over the salad and drizzle over dressing.
