Steamed Cod With Salsa Fresca

Ingredients4 chunky fillets of cod
Salsa
½ cup flat-leaf parsley leaves
½ cup dill leaves
¼ cup chives
1 tbsp wholegrain mustard
2 tbsp lemon juice
2 tbsp drained, rinsed baby capers
1 clove garlic, crushed
80ml olive oil
Salt and pepper

Preparation1. Steam the cod on a 85% steam for 7 minutes. Then season with salt and pepper.
2. Blitz all the salsa ingredients in the food processor. Season with salt and pepper. Ideally leave to stand for a period for flavours to infuse.
3. Serve cod with a dollop of salsa.
