Spring Chicken Stir-Fry

Ingredients1 tbsp sunflower oil
4 chicken breasts, sliced into strips
2 leeks, halved lengthways and chopped into 2cm pieces
1 courgette, sliced into long strips
1 bunch asparagus, sliced into 3 lengths
200g green beans
1 small head of broccoli, broken into small florets
2 tbsp hoisin sauce
2 tbsp soy sauce
1 tbsp plum sauce
Steamed basmati rice to serve

Preparation1. Heat the oil in the wok and stir-fry the chicken until cooked. Set aside in a clean bowl.
2. Then add the broccoli and 2 tbsp water to create steam, stir for a minute before adding all the other vegetables. Cook for about 3 minutes until just tender but still crunchy.
3. Add the chicken and all the sauces to the wok and heat through.
4. Serve with basmati rice steamed according to Miele recipe.
