Rhubarb and Strawberry Pavlova

Ingredients1 pavlova base as per Miele Recipe
1 bunch rhubarb, trimmed and cut into 5cm diagonal chunks
300g punnet strawberries, hulled and cut into thick slices
2 tbsp caster sugar
2 tbsp water
5cm ginger, cut into large chunks
300ml cream, stiffly whipped

Preparation1. Place the rhubarb, water, sugar and ginger in a pot on the Induction Hob. Cover and boil vigorously for 5 minutes.
2. Add the strawberries and cook, uncovered for a further 2 minutes.
3. Remove the ginger and allow to cool.
4. Pile whipped cream on top of the pavlova and then the cooled fruit.
5. If you prefer the fruit warm, serve the cream separately and just pile the fruit on top of the pavlova.
