Rainbow Rice Salad

Ingredients2 cups of basmati rice
2 cups cold water
1 red pepper, finely diced
1 yellow pepper, finely diced
1 green pepper, finely diced
1 red onion, finely diced
1 avocado, finely diced
2 tomatoes, finely diced
6 radishes, finely sliced on mandolin
80ml lime juice
30ml sunflower oil
Salt and pepper
2 tbsp chopped fresh coriander

Preparation1. Steam the rice with the water on a solid steam tray at 100% steam for 10 minutes. Fluff up with a fork and spread onto a cold steam tray and cool down in the freezer while you prepare the rest of the ingredients.
2. Mix all the ingredients together, adjust flavours and season to taste.
3. Store in the fridge.
