Puff Pastry Purses

Ingredients1 tbsp olive oil
500g baby spinach leaves
1 onion, finely diced
1 clove garlic, crushed
Zest of 1 lemon
2 tbsp chopped fresh flat-leaf parsley
2 tbsp chopped fresh dill
2 tbsp chopped fresh mint
250g ricotta cheese
Fresh nutmeg
Salt and pepper
2 sheets ready rolled puff pastry
1 beaten egg, for egg wash

Preparation1. Microwave the spinach on 1000 watts for 4 minutes. Place in a colander over the sink and drain out excess liquid.
2. Heat the oil in a pan on the Induction Hob and saute the onion and garlic until soft.
3. Combine the spinach, herbs, onion, lemon zest and cheese in a bowl. Season with salt, pepper and nutmeg.
4. Lightly flour your work surface and roll out each sheet of puff pastry to the thickness of a €2 coin. Cut each sheet into 9 squares.
5. Place a spoonful of spinach mixture in the middle of each square.
6. Gather together and scrunch the edges of each square so that it looks like a purse.
7. Place on the lined oven tray and brush with egg wash.
8. Bake for 22 minutes until golden.
9. Brown under the salamander for a few minutes if a deeper colour is desired.
