200g caster sugar
1 tsp cornflour
1 tsp white wine vinegar

Preparation1. In a very clean bowl, whisk the egg whites until stiff.
2. Gradually snow in the caster sugar and whisk. Continue whisking until the caster sugar dissolves.
3. Sieve the cornflour in and fold in along with the vinegar.
4. Spoon into a circular shape on your baking tray, slide into oven using telescopic arms.
5. Reduce the temperature of the oven to 120°C and bake for 1 ¼ hours.
6. Lift gently using the paper and allow to cool on a wire rack.
