Preparation1. Defrost the pastry according to packet instructions.
2. Lightly flour your work surface and rolling pin. Roll out the sheets of pastry to the thickness of a €2 coin.
3. Cut the pastry into coaster size rounds. Using a smaller pastry cutter, lightly score a smaller circle inside the larger one. This rim will puff up and hold in the apples.
4. Place the puff pastry circles on a lined baking tray and prick with a fork.
5. Core and very thinly slice the apples. Arrange overlapping apples slices on each pastry circle.
6. Lightly brush with melted butter and sprinkle over a tiny bit of sugar.
7. Bake for 10 minutes until crisp and puffed up.
8. Slide under the salamander for a few minutes to help caramelise the apple.
9. Allow to cool slightly before serving.
